Granny’s Southern Pecan Pie

Recipe: Southern Pecan Pie
From: Granny Howell (Her Recipe)
Ingredients:

3 eggs, beaten
1/2 cup sugar
1 cup dark corn syrup
1 tablespoon flour or cornmeal
1 teaspoon vanilla (extract)
1 cup to 1.5 cups pecans
1/4 teaspoon salt

(a pre-made, unbaked pie crust is also apparently needed)

Spread pecans in the bottom of unbaked pie crust. Mix all other ingredients. Pour over pecans. Bake 15 minutes at 450 degrees. Reduce heat to 350 degrees. Bake 20 to 30 minutes until brown.

Born in 1924 in rural Mississippi the last of 13 children (with two sets of brothers who were twins), it is a part of familial pride that my grandmother, Granny Howell, is the caretaker or inventor of many recipes. There are several recipes she is particularly fond of (or is often requested to make), and most of them have some form of a nut in them.

Not liking nuts myself, I nevertheless treasure her recipes as a piece of cultural heritage and for her remarkable penmanship and will be sharing them here for all to enjoy. Just don’t claim them as yours’s in any baking competitions.
