Granny’s Award Winning Yugoslav Pork with String Beans

Yugoslav Pork with String Beans

Handwritten note: I won $25.00 for this recipe

4 servings

1 large onion, thinly sliced
1 large green pepper, seeded and thinly sliced
1 pound pork tenderloin, cut into bite-size chunks
1/2 teaspoon paprika
Salt and freshly ground pepper

1/2 pound green beans, trimmed
1/2 cup water
2 tablespoons flour
sour cream (garnish)

Heat small amount of oil in large skillet over medium high-heat. Add onion and green pepper and sauté until browned. Stir in pork, paprika, salt, and pepper to taste and continue cooking until meat is browned. Stir in beans and water, reduce heat, cover and simmer until pork is tender, about 45 minutes.

About 5 minutes before serving, brown flour in small amount of oil over low heat. Add paprika for color and stir constantly for 2 or 3 minutes. Add to meat and continue cooking until sauce thickens. Serve hot topped with sour cream.

The story to our knowledge is that Granny submitted this when a club she belonged to had a call for recipes for an upcoming newsletter. She got the original recipe from a magazine, which is where the name came from.
