Aunt Beatrice’s Sweet Potatoe Pudding

  • 2 medium sweet potatoes (grated)
  • 1 cup sugar
  • 1 cup sweet milk
  • 2 eggs
  • 1/2 cup cornmeal
  • 1 stick margarine

Note in margin: Carrie Howell’s recipe she gave me in the 1970’s Granny

Melt margarine in iron skillet. Mix other ingredients and put into skillet. Bake at 350 degrees. Stir often while cooking.


(I feel like this is a great example of how limited directions can be in cooking instructions in our family…)
