Aunt Beatrice & Aunt Vera’s Fruit Pies

Recipe:

(Filling)

  • 7 oz pkg dried fruit
  • 1 c water
  • 1/2 c sugar

Crust

  • 2 c plain flour
  • 2 1/2 t baking powder
  • 1 t salt 
  • 1/2 c oil
  • 1/2 c milk

 

Directions:

Boil fruit in water 15 minutes. Add sugar. 

Cook stirring until all liquid is cooked out, about 5 mins. Cool.

(For dough)

Mix all ing (all in?). Divide into 6 equal balls. Roll reach ball between 2 squares (of) wax paper. 

Remove top sheet of wax paper. Put 1/6 of fruit on one side of crust, fold 1/2 of crust over & seal edges with fork.

Pick up with wax paper & flip over on hand. Frui in hot oil or bake on cookie sheet in oven. (Repeat each pie on same 2 sheets of wax paper)

My favorite dried fruit is peach or apricot. Beatrice and Vera’s pies are similar to this except they used home dried fruit and self rising flour, water & less oil in crust.

Pie crust (2): 2 c. plain flour, 1 1/2 t salt, 1/2 c oil, 1/4 c milk. Mix & roll between 2 sheets of wax paper. (This must be Beatrice and Vera’s recipe, so replace with self rising flour?)
